Meet Aron – Head Chef

Behind every dish at The Royal Victoria Hotel is a team that is passionate about good food, quality ingredients and making the most of the fantastic produce available here in Wales.
We caught up with our Head Chef, Aron, to talk about the inspiration behind our menus, the importance of cooking with the seasons and some of the dishes our guests return for time and time again.
Do we change the menu for seasons and why?
We regularly adapt our menu to reflect the seasons, making the most of the fantastic produce available here in Wales. Using ingredients when they are at their freshest and full of flavour means we can keep dishes simple and let the quality of the produce shine through.
“As a chef, I think it’s important to work with produce that is available at its best. Different seasons bring different ingredients, flavours and ideas, which gives us the opportunity to keep the menu interesting for our guests.” – Aron, Head Chef at The Royal Victoria Hotel.
Are there any guest favourites on the menu?
Welsh lamb is one of the dishes our guests return to time and time again. Rather than serving it in the same way throughout the year, the kitchen adapts the dish with the seasons, creating richer, more comforting flavours in the colder months and lighter combinations through spring and summer.
“Our Welsh lamb is definitely one of our customer favourites. It’s a fantastic product and something we really enjoy working with in the kitchen.”
That seasonal approach also gives the team a chance to keep experimenting with how the ingredient is presented, while still allowing the quality of the Welsh lamb to remain at the heart of the dish.
“I think that’s part of what makes it enjoyable for us as chefs as well, taking a great local ingredient and finding new ways to showcase it.”
How do we balance affordability, seasonality and quality?
Creating dishes that offer both quality and good value is an important part of how we approach our menus. Seasonality helps us strike that balance, allowing the kitchen team to build dishes around ingredients when they are at their freshest and offer particularly good value.
We also make a conscious effort to use as much of each ingredient as possible. Not only does this help us get the best from the produce we work with, it also helps to reduce unnecessary food waste.
“For me, good cooking isn’t necessarily about using the most expensive ingredients; it’s about taking good-quality produce and making the most of it.”
That approach goes hand in hand with maintaining consistently high standards across the restaurant. We’re proud to have retained an AA Rosette for eight consecutive years, something that reflects the care and attention our kitchen team puts into every dish.
“Ultimately, we want our guests to enjoy food that is well cooked, full of flavour and made with good ingredients, while still feeling they’ve received great value for money.”
